The vines went into the lower part of the property towards Bruce Creek, a warmer and more sheltered spot where sandy loam over limestone suits the variety. This is only the second one they have made. The fruit is hand-picked and ferments with partial carbonic maceration, layering crushed and whole-bunch fruit, then ages in mature 500-litre puncheons.\u003c\/p\u003e\n\u003cp\u003eLight on its feet and dry, with raspberry, red cherry and a peppery snap, the tannin barely there. It takes a chill well. Serve at 13 to 14 degrees.
