Fermentation ran on indigenous yeast in new oak barrels, and the wine then aged on fine lees in a 1,300-litre foudre before bottling in July 2024. That combination of barrel ferment, partial skin contact, lees and large-format maturation is why the Gris from this cellar tastes closer in shape to a serious barrel-fermented white than to the usual pear-drop version of the variety.\u003c\/p\u003e\n\u003cp\u003eTextural and dry, with nashi pear, quince and citrus peel over a faintly grippy, savoury finish. Serve at 11 degrees, not colder, or you lose the middle.
