Every batch fermented on wild yeast, with part of the volume fermented in new barrels; some parcels saw up to two days on skins and others none at all. Maturation followed on fine lees, in foudre and other large-format oak, with bottling in August 2026. Henty is one of the coldest GIs on the mainland, and as usual it gave small crops of very good fruit.\u003c\/p\u003e\n\u003cp\u003eAromatic and finely built, with pear, citrus and a chalky, savoury undertow from the skin-contact parcels. Dry and long. Serve at 11 degrees.
