Ferments were spontaneous and run in small batches, a tenth of the volume went through malolactic conversion, and bottling was done at 10.8 grams per litre of residual sugar. Getting sugar right in Riesling is difficult, and Ray Nadeson is a committed advocate of leaving a little in every one of his, essential for the texture of the wine as he puts it. He is good at it.\u003c\/p\u003e\n\u003cp\u003eLime leaf and white flowers on the nose, then fleshy citrus weight, long racy lines and a lip-smacking, moreish finish. It tastes dry despite the sugar.
