All the 2024 Riesling came from Barwite. Fruit fermented in small batches across stainless steel and large oak, then matured on light lees for eight months, with a small portion taken through malolactic conversion. Bottling was at 10 grams per litre of residual sugar, left deliberately to balance the natural acid, which Nadeson considers essential to a Riesling's texture.\u003c\/p\u003e\n\u003cp\u003eLime, green apple and wet slate, the sweetness buried under acid and reading as weight instead of sugar. Long and tightly wound. Serve at 9 to 10 degrees.
