Whole bunches went into a long, slow press and only the cleanest juice made it to tank. Fermentation started naturally in steel before the wine moved to old French puncheons, where it finished, went through malolactic and spent time on lees. Syrah is the grape this stretch of Victoria is known for, and turning it into something pale and fine is a fair way to show it off.\u003c\/p\u003e\n\u003cp\u003ePale, dry and lightly frothy, with wild strawberry, rose and a savoury bready undertow from the lees.
