Every variety fermented on its own in a range of vessels, each with a different stretch of time on skins. Staggering the picks and varying the ferments is what gives the wine its texture without weighing it down. Pat Underwood makes it for the table, and it behaves accordingly.\u003c\/p\u003e\n\u003cp\u003ePale copper in the glass, with strawberry, citrus and a dry, gently grippy finish. There is more substance here than the colour suggests.
