They chose Fiano, a variety from Campania in southern Italy, because it holds its natural acidity and texture in warm, dry climates, making it well suited to Heathcote's inland conditions. The fruit is organically grown, hand picked and fermented to dryness with a gentle hand, keeping the wine's natural texture and freshness.
