The grapes are the Gascon classics: Folle Blanche for florality, Ugni Blanc for freshness, and the hybrid Baco 22A for its rounder, plummier weight. Unlike Cognac, Armagnac is distilled once through a continuous alambic armagnacais at low strength, so more of the raw material survives into the spirit, and it is then aged in local black oak. Baco 22A is the variety Armagnac keeps for its oldest bottlings because it stands up to decades in wood better than the others, and at sixty per cent of the blend it sets the tone here.
