The grapes are the Gascon classics: Folle Blanche for florality, Ugni Blanc for freshness, and the hybrid Baco 22A for its rounder, plummier weight. Unlike Cognac, Armagnac is distilled once through a continuous alambic armagnacais at low strength, so more of the raw material survives into the spirit, and it is then aged in local black oak. Folle Blanche on its own is the connoisseur's choice in Gascony, prized for its violet-scented finesse but difficult to grow, which is why so little of it is left.
