The family farms three plots there totalling 1.9 hectares, on calcareous clay with some sand and with south and south-easterly exposures. Sibi et Paucis — roughly, for the few and the favoured — is the estate’s museum release programme: ten to fifteen per cent of each year’s Nebbiolo production is held back in the underground cellars under optimal conditions and re-released closer to maturity, ten years after the vintage in the case of the Barolos. Each bottle carries a stamp on the label distinguishing it from the original release. The winemaking is unchanged: wild-yeast fermentation, an extended maceration, ageing in mostly used 500-litre French oak casks and bottling without filtration.\u003c\/p\u003e\n\u003cp\u003eReleased with maturity already behind it but with plenty in reserve, and the three-litre format will keep it going longer still; serve at 16–18°C with braised beef, truffled pasta or aged Parmigiano.\u003c\/p\u003e\n\u003cp\u003e\u003cem\u003e*Every effort is made to ensure the current vintage is accurate; however, variations can occur.
