Jean-Luc Mader makes one from fruit grown on the Grand Cru slopes at Hunawihr that he chooses to declassify, fermenting the must right out so that only 3.7 grams per litre of residual sugar remain. The variety's naturally low acidity means the winemaking has to be precise: an early pick to hold freshness, whole bunch pressing, a cool fermentation in stainless steel and a spell on fine lees to fill the mid palate.
