Jean-Luc Mader farms his Grand Cru parcels organically and picks late in the season for full ripeness. The must is fermented slowly in stainless steel and the fermentation is left to stop of its own accord, which here leaves 37.8 grams per litre of residual sugar, so the wine sits between off-dry and properly sweet.
