The vines lie on the limestone and clay slopes around Hunawihr, below the Rosacker Grand Cru, and the estate is farmed organically throughout. Bunches are pressed whole and fermented cool in stainless steel, with the fermentation carried right through so that only 0.9 grams per litre of residual sugar remain. Several months on fine lees add weight without any recourse to oak, and the wine is bottled under screwcap.
