Jean-Luc Mader farms organically around Hunawihr and takes a restrained approach to the variety, destemming the fruit, fermenting in small vats with gentle extraction and maturing the wine in tank rather than new oak so the fruit stays transparent. Yields are kept low and the wine is bottled young.
