Jean-Luc Mader farms the parcel organically from the family cellar at Hunawihr and bottles it as a single site wine, kept separate from the estate Riesling. Fruit is whole bunch pressed, fermented with indigenous yeast in stainless steel and left on fine lees to gain texture, with no oak at any point.
