Maison C. Thiriet works with hand-picked fruit from Corgoloin, at the southern end of the Côte de Nuits where the slope runs into the Comblanchien limestone quarries. The grapes are pressed slowly and the juice ferments spontaneously in a combination of barrel and tank, which gives the wine a creamy middle without heavy oak character. The house style favours red fruit and freshness over colour, and the spelling Rosay is a nod to the older French form.
