It has long been a source of taut, honest white Burgundy at sensible prices, and warming seasons have done the appellation a considerable favour. A mésange is a small songbird, keeping to the Ponsot habit of naming its cuvées after birds. The Maison arm buys fruit from growers, and this source vineyard is typical of the appellation in its cool aspect and rocky, limestone-rich ground, with vines around thirty years old. In the cellar the fruit is now pressed in whole bunches and vinified with a higher proportion of solids in the juice, which builds texture. The result carries more layering and generosity than Saint-Romain usually shows.\u003c\/p\u003e\n\u003cp\u003eDrinking now and worth keeping four or five years.
