Mas de Libian farms biodynamically there, and Bout d'Zan comes from 40-year-old vines spread across a range of the estate's soils: galets roulés, the rolled alluvial pudding stones familiar from Châteauneuf, along with sandy clay and lower-lying limestone parcels. The blend is roughly 75 per cent Grenache to 25 per cent Syrah, and the two varieties are co-fermented rather than blended after the fact — Hélène Thibon's father put it as the earlier you consummate the marriage, the better the relationship. A portion of ripe Syrah stems went into this ferment for lift, and the wine was raised in a mix of Stockinger foudre and cement vats.\u003c\/p\u003e\n\u003cp\u003eReady now and will hold four to five years.
