The blend is roughly a third each of Grenache, Counoise and Syrah — Counoise being one of the old southern Rhône varieties that has largely fallen out of fashion elsewhere. Following the Provençal model, all three are given a short maceration and then pressed slowly into tank, where fermentation proceeds with wild yeasts alone. There is no oak and very little handling. The result is a rosé made for drinking rather than contemplating: pale, red-fruited and floral, with a powdery freshness and a twist of dried Provençal herbs on the finish, and the mineral cut that the estate's stony sites reliably give.\u003c\/p\u003e\n\u003cp\u003eDrink young, within a year or two of release, and serve at 10–12°C with grilled prawns, salade niçoise or a tomato and goat's cheese tart.\u003c\/p\u003e\n\u003cp\u003e\u003cem\u003e*Every effort is made to ensure the current vintage is accurate; however, variations can occur.
