The family works biodynamically and still ploughs with a horse. This rosé comes from the estate's younger vines, spread across several of those stony sites, and is made on the Provençal model: a short maceration followed by slow pressing into tank, then fermentation with wild yeasts. The varieties are unusual for a pink wine of this kind, with Counoise in particular adding a savoury, peppery edge that the more common Cinsault does not, and the vineyard material carries considerably more flavour than the volume rosé the style is associated with. It is bottled as Vin de France.\u003c\/p\u003e\n\u003cp\u003eDrink it young, within a year or two of release.
