There is also a small contribution from the estate's decade-old plantings of Counoise and Vaccarèse, two southern Rhône natives that most growers pulled out long ago. Everything is destemmed, given a short five-day maceration and raised exclusively in concrete tank, so nothing gets in the way of the fruit. Bottling is unfiltered, with only a small sulphur addition at that point and none earlier in the process.
