The base is high-grown Grenache at around 75%, with roughly equal parts Mourvèdre and Syrah, all destemmed, plus a little Counoise and Vaccarèse from decade-old plantings of these two southern Rhône natives and, this year, a splash of Couston. The name refers to the Provençal game of boules, which sets the tone: there was a short five-day maceration, the wine was raised entirely in concrete tank, and it was bottled unfiltered with only a very small sulphur addition. The estate is farmed biodynamically, with horses used in the vineyard.\u003c\/p\u003e\n\u003cp\u003eMade to be drunk young, over the next two to three years.
