It is made by arresting a single fermentation in pressure tank while sugar and carbon dioxide remain, which gives a wine of around five per cent alcohol with a soft, incomplete sparkle rather than the full pressure of a sparkling wine. Massolino is far better known for Barolo, and its Moscato is a small production drawn from hand-harvested fruit, with a good proportion of the vines rooted in the calcareous soils of Serralunga d'Alba. That site gives a more savoury and structured reading of the style than the sweeter, more overtly grapey examples the appellation is usually associated with.\u003c\/p\u003e\n\u003cp\u003eDrink young, within a year or two, while the sparkle and aromatics are at their best.
