Massolino is better known for Barolo, and its Moscato is produced only in limited volume. A good portion of the fruit comes from vines rooted in the prime calcareous soils of Serralunga, which gives a more savoury and structured style than the norm for the appellation. The grapes are hand-harvested and the must is chilled, then fermented in a sealed pressurised tank; the ferment is stopped by cooling and filtration while natural grape sugar and a light carbon dioxide pressure remain, so no liqueur is added and the alcohol stays low.
