Fruit was gently destemmed and left on skins for fourteen days before pressing to tank. After a short settle the wine was racked with some solids still in suspension to seasoned French puncheons, where it stayed for twenty-three months, a long stretch by any measure and the reason for its savoury depth. Bottling followed in February 2025, without fining or filtration.\u003c\/p\u003e\n\u003cp\u003eDeep gold, with quince, dried herbs, beeswax and a dry tannic finish that asks for food. Twelve degrees is about right.
