It sets fruit badly and yields dismally, with three tonnes to the acre about the ceiling in a region where ten is not unusual, and for a wine like this that arithmetic is a gift. Even in Friuli it is scarce, with small bunches of thick-skinned berries in a sun-flecked gold. Fruit came off Denis Pasut's Mildura vineyard in early March, was destemmed and kept on skins right through to the final day of winter, then pressed to a couple of seasoned hogsheads where it sat undisturbed until bottling in July 2024.\u003c\/p\u003e\n\u003cp\u003eConcentration is what you notice: dried apricot, honeycomb, bitter orange and a tannic, savoury finish, all of it dry.
