Production began in 2018, and the fruit was chosen from sites judged to have the right make-up for sparkling Pinot: a north-east-facing block on a rolling five-degree slope, where ripeness and acidity meet in the balance Peter Dredge wanted. Whole clusters were pressed and only the first two-thirds taken for the traditional-method wine, the remainder going to the earlier-released Harvest Sparkling. Fermentation and maturation happened in used French oak over three months, then lees ageing, with two grams per litre at disgorgement in late 2021.\u003c\/p\u003e\n\u003cp\u003eMore vinous than the Blanc de Blancs, with strawberry, red apple skin and a savoury bready depth, fine acid keeping it upright. Serve at 8 to 10 degrees.
