This one was vinified in stainless steel, and the juice selection was severe: only 300 litres per tonne was used, where 500 to 550 is the industry norm, meaning nothing beyond the very cleanest fraction of the press went into the wine. Three years on lees followed, with three grams per litre of dosage at disgorgement. Peter Dredge releases the Pinot-based wine younger because Pinot takes on lees character sooner.\u003c\/p\u003e\n\u003cp\u003eTaut and mineral, with red apple, citrus peel and a fine chalky texture, the fruit more suggested than stated.
