Hand-picking ran across two weeks in 2021. Fruit was destemmed into three open fermenters with varying proportions of whole clusters, roughly 30 per cent of the finished wine, keeping the berries whole wherever possible and crushing nothing. Five days of cold soak preceded a natural ferment, then the wine was pressed to French oak, 10 per cent new, and left on heavy lees for nine months before bottling without filtration.\u003c\/p\u003e\n\u003cp\u003eRed cherry and rose petal on the nose, a silky mid-palate and tannins that melt away. Perfume is the point here, not power.
