Fruit came off a sustainably farmed grower vineyard in Omaka, hand-harvested into small bins and pressed as whole bunches. Fermentation ran on indigenous yeast, three-quarters in two and three-year-old French barrels and the balance in a stainless barrel, followed by full malolactic conversion and six to eight months on lees with no stirring. Racked to tank in December and left to settle, it went to bottle unfined and unfiltered in February.\u003c\/p\u003e\n\u003cp\u003eA hedonistic nose of ripe pear, fresh peach and oatmeal, then a taut, chalky palate of nectarine, pear and iodine with real drive. The cleansing saltiness is unmistakably Marlborough. Serve at 12 degrees.
