Fruit from a sustainably farmed vineyard in Omaka was hand-harvested into small bins and pressed as whole bunches, then fermented on indigenous yeast — 75 per cent in three-year-old French barrels, the rest in stainless. Full malolactic conversion followed, with six to eight months on lees and no stirring whatsoever. Racked to tank to settle, it was bottled unfined and unfiltered.\u003c\/p\u003e\n\u003cp\u003eRipe pear, peach and oatmeal on a hedonistic nose, then a chalky, taut palate carrying nectarine, pear and an iodine note into a driven finish. Dry and harmonious.
