Fruit came from a sustainably farmed grower vineyard in the Ben Morven sub-region, hand-harvested into small bins and sorted carefully on arrival. Ten per cent went into tank as whole bunches with the rest destemmed, and the must spent twelve days on skins, fermenting on indigenous yeast in two and three-year-old French barrels. The wine was racked to tank after malolactic conversion in December, left to settle, and bottled unfined and unfiltered in February with minimal sulphur.\u003c\/p\u003e\n\u003cp\u003eA light Pinot colour, generous red fruit and floral aromatics with an earthy edge, then a succulent, juicy palate carrying a whiff of smoke and a sappy snap. Serve at 13 to 14 degrees.
