Fruit was hand-harvested into small bins and sorted on arrival at the winery. Ten per cent of bunches went in whole with the remainder destemmed, and the must stayed twelve days on skins, fermenting on indigenous yeast in two and three-year-old French oak. There is no new wood and no adjustment: the wine is made the way Mike Paterson makes his single-vineyard Pinots, on a shorter leash and at a friendlier price.\u003c\/p\u003e\n\u003cp\u003ePale in the glass, generous on the nose with red fruit, florals and something earthy behind. The palate is succulent and bright, with a whiff of smoke and a sappy edge giving it depth.
