Mike Paterson explains that during a natural ferment a good share of malic acidity drops out, which broadens the palate and lets him ferment every gram of sugar without leaning on artificial balance. Nine months on lees through winter followed. Almost nothing about that approach is standard for the category, where machine harvest, cultured yeast and a touch of residual sugar are the norm.\u003c\/p\u003e\n\u003cp\u003ePungent and aromatic on opening, then well-textured, crisp and moreish, driven by tangy energy into a mouth-watering finish.
