Mike Paterson runs Corofin, and this is where he applies the same thinking at an everyday price — no cultured yeast reaching for tropical aromatics, no residual sugar papering over gaps, and enough time on lees to give the wine a proper middle. Marlborough grows a great deal of Sauvignon Blanc; very little of it is made like this.\u003c\/p\u003e\n\u003cp\u003eRipe citrus and stone fruit held in check by tangy energy, the texture supple and the close dry and clean.
