Grégory Pérez blends 85% Godello with 15% Doña Blanca for this wine. The Godello comes mostly from a stony site at Carracedo, with additional fruit from sandy loam and clay-limestone plots at Valtuille and Villafranca del Bierzo; the Doña Blanca is drawn from similar ground and includes older gobelet-trained material on the slate soils of Espanillo. Vine age runs from 20 to 80 years and everything is picked by hand, which is unusual at this price. Fermentation is with wild yeasts, and the wine is then raised on its fine lees in tank and large cask for six months, an élevage that adds weight and a mineral, tangy grip without any obvious oak character.\u003c\/p\u003e\n\u003cp\u003eThe 1.5-litre format suits a long table; drink it within three or four years with grilled fish, roast chicken or a seafood rice.
