Gregory Pérez draws this bottling from multiple remote parcels of 30- to 60-year-old vines dotted across the slate-rich slopes around Valtuille and Villafranca del Bierzo. The blend also takes in a splash of Godello and Alicante Bouschet, known locally as Garnacha Tintorera, a legacy of the way the region's old vineyards were interplanted. Pérez destemmed 90 per cent of the fruit in pursuit of something pure and refreshing, fermented with indigenous yeasts in stainless-steel tanks and bottled early to hold on to the wine's freshness. Altitude and a wide diurnal range give the fleshy fruit a bright structural counterweight, with gravelly tannins adding length.\u003c\/p\u003e\n\u003cp\u003eDrink over the next five years.
