Gregory Pérez, trained in Bordeaux and of Spanish and French parentage, founded Bodegas Mengoba at Espanillo and works old vines across several villages. This rosado is drawn from mature Mencía on the clay and limestone of Valtuille and Villafranca and on the pure slate of Espanillo, the highest vineyard in Bierzo, with a little Godello from the Carracedo vineyard for freshness and texture. Both varieties are crushed together and left 24 hours on skins, then pressed into a single 1,800-litre tank and fermented with indigenous yeasts.
