Gregory Pérez's core white is exclusively Godello, selected from 30- to 40-year-old parcels in Cacabelos, Valtuille and Villafranca del Bierzo. Those plots cover a range of soils, from river stones to sandy loam and slate, all sitting at around 550 metres. Fermentation is with wild yeast in wooden foudre, after which the wine spends ten months on fine lees in two 4,000-litre oval wooden vats. The ageing is longer and less reductive than for the estate's younger white, which allows the smoky, mineral character of the slate and calcareous soils to come through more clearly. The finished wine is grapefruity and fleshy in turn, with a powdery, savoury texture and a deep, earthy finish.\u003c\/p\u003e\n\u003cp\u003eDrinking well now and worth keeping five years, it suits grilled fish, roast pork or a mushroom risotto.
