The oldest vines are approaching 90 years, and as with many Spanish vineyards of that age the parcel is a mixed planting: mainly Mencía with around 15% Alicante Bouschet, Estaladiña and Godello. Rather than separate them out, Pérez keeps the field blend as it stands, on the view that the minor varieties are part of the vineyard's story. The site is farmed as it was when planted, using an ox-drawn plough, hard work given the elevation, aspect and rock-strewn soil. The fruit is fermented with a portion of the white bunches in a 5,000-litre French Grenier foudre, then raised for just under a year in 2,500-litre oak ovals, so the wine keeps its silky texture and mountain freshness.\u003c\/p\u003e\n\u003cp\u003eIt is drinking well now and should hold for eight to ten years; serve it at 16–18°C with slow-cooked beef, smoked meats or a mushroom ragù.\u003c\/p\u003e\n\u003cp\u003e\u003cem\u003e*Every effort is made to ensure the current vintage is accurate; however, variations can occur.
