Their Riesling comes from the Clare Valley, the country's most celebrated home for the variety, where high elevation, warm days and cold nights produce Rieslings of intense citrus character and bracing natural acidity. The wine is fermented dry in stainless steel to preserve its purity, without oak, and bottled under screwcap, the closure Clare producers pioneered for Riesling.
