Winemaking is deliberately hands-off: each batch is pressed, lightly settled and racked to used barrels with plenty of solids still in the juice, then fermented wild and raised un-sulphured on lees for twenty months in neutral barrels that previously held the Caledonia Australis Chardonnay. Both primary and malolactic fermentation happen naturally, and the aim is to have them finish quickly so freshness and fruit character survive.\u003c\/p\u003e\n\u003cp\u003eTwenty months on lees gives it real breadth: white peach, lemon, a nutty lightly oxidative edge and a long dry finish. Oak is invisible.
