Gruner was a considered choice: a marginal Gippsland site and a shift in how people eat in this country both pointed towards a lower-alcohol, savoury white. Fermentation ran on wild yeast, and the wine was raised mainly in stainless steel with a single neutral barrel in the mix to lend breadth and a little complexity.\u003c\/p\u003e\n\u003cp\u003eStriking on the nose, with white pepper, green plum and a hint of guava or rosewater, and racy through the palate, with texture but no weight and a sappy, cool finish.
