That combination, concrete for slow even maturation and long-retired oak for a little breathing room, is what keeps the fruit so clear. Mark Matthews farms organically in a corner of South Gippsland where few people are looking, and the question his wines raise is whether better value organic Victorian Pinot exists. It does not.\u003c\/p\u003e\n\u003cp\u003ePure red fruit, a dusting of spice and that damp-forest note Gippsland does so well, carried on fine tannin and fresh acid. A slight chill suits it.
