Tasmania's cool maritime climate is the source of many of Australia's finest sparkling wines, giving Pinot Noir and Chardonnay the fine, lingering acidity that traditional-method wine needs. Second fermentation takes place in the bottle, and time on lees adds toasty brioche and shortbread notes alongside crisp apple, citrus and a touch of beeswax. A mineral edge gives depth and a refreshing finish.\u003c\/p\u003e\n\u003cp\u003ePour it well chilled as an aperitif, or with freshly shucked oysters, smoked salmon blinis or tempura prawns.
