Michael Downer handpicks and destems the fruit, then lets it ferment on wild yeast in a 1500-litre foudre, where it sits for two months before moving to tank for another two ahead of bottling. Large old wood and a short elevage, in other words, enough to build a little texture and not enough to blur anything.\u003c\/p\u003e\n\u003cp\u003eFine-boned and dry, with lime, white blossom and a chalky mineral finish. The acidity is firm and clean, and the wine is quietly persistent.
