Whole-bunch pressing keeps phenolics low and the lees time supplies the texture, which is the balance Michael Downer is after in this wine.\u003c\/p\u003e\n\u003cp\u003eWhite florals and citrus form a powerful core, framed by chalky texture and fresh, driving acidity. Textural and mouthwatering, and a long way from the standard South Australian template.
