Of the three sites on Piccadilly's western ridge that Michael Downer has worked with over the years, all predominantly east-facing, one has consistently stood above the rest: a vineyard opposite the Mount Lofty Botanic Gardens whose leaner soil profile, combined with beautiful ripening conditions that season, made the case for going it alone. Forty-five per cent of the fruit fermented as whole bunches, and the wine spent up to ten months in French and Austrian wood, demi-muids, puncheons and barriques, roughly 45 per cent of it new, tight-grain and low-impact, chosen to build texture and structure.\u003c\/p\u003e\n\u003cp\u003eDark cherry and rose petal over a fine-grained, layered palate, with new oak reading as structure more than flavour. It has both lift and grip.
