Hand-picked and whole-bunch pressed as usual, the juice fermented wild in barrel and stayed there ten months, about a fifth of the wood new. The season did much of the work, a cool and even year across the Hills that delivered depth without costing acidity. Michael Downer built his reputation on Chardonnay, and the house signature is restraint: barrel used for texture, not for flavour, and the fruit left legible.\u003c\/p\u003e\n\u003cp\u003eRipe stone fruit and citrus peel, white blossom, a thread of struck flint. The palate is silky then incisive, closing on a mineral snap. Ten to twelve degrees.
